Ingredients:
- 2/3 tbsp olive oil
- 1 onion
- 2 green chillies
- 1 cup of dried couscous
- 1 tin of chickpeas
- pinch of mixed curry powder
- pinch of turmeric
- Salt to taste
Garnish:
- Handful fresh finely chopped coriander
- Tomatoes
- Cucumber
Method:
- Chop the onion finely and fry it in the pan with the spices and green chilli
- Once the onions start to soften slightly add in the chickpeas, cover the pan and saute gently so enable the chickpeas to soften in the steam and oil.
- Cook the couscous per pack instructions
- Add the cooked couscous to the chickpeas mix and stir through
- Allow to cool and mix in the salt and garnish with the coriander
